Bell Peppers

Bell Peppers are not hot peppers like most other peppers are. Bell peppers are called green peppers, red peppers, and yellow peppers. As they age, they change color, ranging from green, orange, yellow, red, purple, brown, or black. If you wait for the red, orange and yellow ones, you are going to end up with a sweet bell pepper.

Although all bell peppers are rich in vitamins A and C, the warm tone yellow, orange and red bell peppers have the most nutrients. They are also the most expensive due to the long wait for full maturity. Green ones are cheaper and quicker to harvest and get to market.

The height of a bell pepper plant should be around 18- 24 inches and they should be planted 18- 24 inches apart. Fruit roughly 4 – 6 inches will grow. You cannot differentiate the sweet bell peppers varieties when they are still young because they are all green.

Red bell peppers are among the most densest vegetables. One medium pepper (148 g) containing only about 30-40 calories provides an excellent source of vitamin C (one of the best sources), vitamin A, and vitamin B6. This same serving also provides a good source of fiber and vitamin E (a potent antioxidant). This diet-friendly treat has no fat, cholesterol or sodium and very few carbohydrates
